Spinach salad with Castelvetrano olives, red onion, walnuts and manchego (sheep's milk) cheese

I NEED my salad tossed to combine all the flavors.  This salad has an incredible flavor combo.  It's also massively healthy - as always. Walnuts, spinach, olives and manchego cheese will have your mouth watering as you toss it with balsamic and olive oil.  These rich flavors will take you to straight to Italy.  

If you want to add protein:

Add Grilled Seabass or Steelehead trout - of course I have recipes for both.

Lucious Vegan, gluten free Blueberry Muffins - kid favorite

These muffins are a killer alternative to egg based gluten laden baked goods.  I use full fat coconut milk and apple cider vinegar.  The result - moist delicious muffins the kids LOVE!!  

You can use the muffin base for anything - not just blueberries.  I have used chocolate chips, coconut flakes, I have even added more vanilla and topped with frosting for birthday cupcake.  Endless options.

Spaghetti squash pasta style with tomatoes, Castelvetrano olives, garlic and avocado

We love our vegetables at FitChick Granola.  This meal is sooooo easy it should be criminal. Packed with nutrients and flavor.  Easy peasy anytime meal that you can use as a base for any number of spaghetti squash combinations.  I personally love  my healthy fats with lots of veggies.  Squash, avocado, tomatoes, garlic.

Ideas for other combos:

Tomatoes, garlic, parmesan, kalamata olives

Mushroom, spinach, pecorino 

Red pepper flakes, olive oil
